Cooking In An Um

This man, Nena Mongkeya, is cooking breadfruit and pig meat in an "um," the Kosrae version of a hot rock oven. The rocks are heated by a wood fire, then the wood and ash are removed before cooking begins. This above-ground cooking is different from the Polynesian underground "umu" or "hangi."
